How To Design Your Kitchen To Fit Your Life -Part II

http://kitchendesignwithnadee.blogspot.com/2014/05/how-to-design-your-kitchen-to-fit-your.html
This article is continuing with earlier,How To Design Your Kitchen To Fit Your Life - Part I.
Another safety issue in the kitchen concerns children. Make sure that pot and pan handles are turned inward so that interested little ones do not pull them off the stove. Putting child proof handles and hooks on all kitchen cupboards, especially ones that hold cleaning fluids and chemicals, is vitally important. Try not to place candy or cookies over top of ranges. This will reduce the attraction of kids who would think nothing of climbing on the cooking surface to receive their afternoon snack.
By following some of these simple strategies, your kitchen can be a safe and relaxing place for both you and your family. The following steps when designing for safety.
  1. Use proper lighting. Good general lighting, supplemented with proper task lighting that is clearly focused on a work surface, can greatly decrease your chance of injury while preparing a meal. Also, the lighting should not produce any glower or shadows on the surface.
  2. Use slip resistant flooring. Falling with a hot casserole or a sharp knife in your hand can have serious costs. A slip resistant material on your floor, such as matte finished wood or laminate, textured vinyl or a soft glazed ceramic tile, will do the trick. If you select tile, try using a throw carpet with a non spin out backing for added safety measures, especially around areas that get wet.
  3. Keep a fire extinguisher handy. I recommended that a fire extinguisher be visibly located near a room exit, away from cooking equipment and 15"-48" above floor.
  4. Keep electrical switches, plugs and lighting fixtures away from water sources and wet hands. Building system require that every electrical receptacle be grounded and protected with ground fault circuit interrupters, which shut off the room's electric current if there is a power surge or if moisture is present.
  5. Consider appliance lock out options. Many of today's electrical devices, mostly ranges, ovens and dishwashers, allow you to "lock out" little hands so no one can use them when you are not in the room. This can be done either with lock out covers or a programmed lock out system.
  6. Regulate water temperatures and devices. Install valves with anti injury devices that prevent water temperature from rising to dangerous levels, or buy pressure balanced valves that balance hot and cold water. Valves also are available that can be pre programmed to your desired temperature setting.
  7. Find a safe cooktop. Avoid being overcooked by steam from boiling pot by staggering burners on your cook top or have one straight row of burners. And never choose a unit with control along the back of the electrical device, controls should be along the side or in the front.
  8. Use the space safely. Think about how traffic will flow through the kitchen and make sure no one will interfere with your space when cooking. Locate microwaves 24" to 48" above the floor to avoid reaching to recover food. Slide out trays and bins in base cabinets make storage items more available so you do not have to bend. And lastly, avoid sharp corners on the ends of counter tops.
Family lifestyles have changed in recent years. In adding to family members sharing in the food preparation, the kitchen has become a social center. Often, friends and guests who drop by to visit the cook, join in the cooking process. In order to meet these changing lifestyle patterns, kitchen design has also go forwarded. If you are building a new kitchen, or remodeling your old one, that it is important to evaluate your needs and consider how many cooks use your kitchen.

It is not necessary to have double sinks or work location since only one person is using each item at a time. A single cooking center which includes a microwave and range will probably be sufficient.
Finally, there is the question of walkways. Extra space should be allowed so that two cooks can pass each other without interference. Allowing 48 to 54 inches of space from barrier to barrier will enable two people to pass each other with bodies parallel. A distance of 60 to 64 inches would allow enough room for true walking.
As you can see, settling  in your kitchen for two cooks requires more than just adding extra counter space.

The design of your kitchen may be traditional or modern, casual or formal, high tech or homey whatever be a sign of your style favorite. Because the cabinets, counter tops, and electrical devices consist of the major components in a kitchen space, you will want to decide what your overall style will be before choosing them. If you are worried about combining looks with practicality, many designs try hard to blend traditional looks with modern conveniences. A generously proportioned kitchen with traditional materials and up to date facilities provide evidences to be both stylish and practical.

Before Launching Your Newly Built Food Premises - Part II

Food Safety Training is must for all. Awareness of both food service employees and managers is probably the most effective method of obtaining fulfillment with the system.

Training enables people to do their jobs well. It improves staff efficiency, gives them a sense of satisfaction and promotes professionalism.

While currently not mandatory, food service workers and managers are strongly encouraged to attend an approved safe food handling course. The health unit provides several options for staff to receive their food handler certification. This certification is accepted by health units. The food handler training program is provided by the relevant communities.

Before Launching Your Newly Built Food Premises - Part I

Staff need to understand the background and principles of their organization, the different forms this organization can take, and their own roles within it. At the beginning of your process, company owner should be obtained the approval for the plan by the public health inspector, who gives legal authority to build food company. This process is vary according to the country.
You know the clear definition  of the food premises is a premises where food or milk is manufactured, processed, prepared, stored, handled, displayed, distributed, transported, sold or offered for  sale, but does not include a private residence.
So, a success operation reduces both food wastes and the risk of harmful promotion. It also attracts customers. Before you open your food premises you should be paid attention for all of its safety outcomes. Public health inspectors are available to assist you. You can get their service to check whether, it is ok or not.
There are food safety & management experience peoples or consultants, who provide information and advice to you and your staff during inspections of your facilities & plant. They provide food handler training seminars also. Inspections and training programs are in place to help prevent problems from occurring within your food premises. You and they have a same goal to supply safe, quality food to public.
The layout of your plant is important for good sanitation. Poorly arranged equipment may create health hazards and affect the economic feasibility of your operation. Good planning should allow for the smooth and systematic flow of work from receiving to serving/selling and the return of expired products to the returning area.
The design, construction and installation of food service equipment are important to the sanitary operation of a food premise.
An important issue to consider in the planning stage is the size of your kitchen to ensure it is large enough to put up the number and types of products you intend to manufacture and the number of staff required to work in the area. It is also important to consider the number of machines required and the most appropriate location for each machine in order to allow for the store in the proper location.
Some food equipment suppliers and architects will advise and lend a hand you in preparing plans and developing layouts. Public health inspectors can also provide assistance.
At the relevant step you should prepare the food premises' site plan with floor areas. Some countries, it should compulsory for the approval from the public health inspectors. It should contain ;
  • Source of water
Municipal supply or a private water supply (if your water supply is a well, show the location of the well on your plan.)
  • Sewage disposal
Municipal sewer system or private onsite sewage disposal.(if the sewage disposal system is already in place, show the location )
  • Garbage storage
Garbage storage area, grease storage receptacle and recyclables.
  • Water supply
An adequate supply of hot and cold water under pressure. (must be potable water)
  • Landscaping
Plan parking areas and driveways.

Pest Control Of The Food Premises

Food premises should be kept free of pests like rats, mice and insects such as flies and cockroaches. Food premises and surrounding areas should be inspected frequently to look for signs of pest infestation. Presence of rats and mice can be indicated by signs left behind by their activities including droppings, holes, runways, biting  marks, feet marks and spreads.
Cockroaches usually hide behind stoves, hot water pipes, sinks, in cupboards, drying rooms and anywhere which is dark and warm. Signs of cockroach infestation include presence of cockroach eggs and droppings and a unpleasant "cockroach" odour.
Flies usually infest places with food attraction. Presence of fecal specks and vomits are common signs of fly infestation.
Food premises are easily infested by rats, mice, cockroaches and flies because they provide them with sufficient food sources and numerous harborage places. Improper handling of food and food debris, accumulation of miscellaneous articles and presence of structural defects cause to be food premises highly susceptible to pest infestations. Pests will not only cause food safety problems but also transmit diseases to human. They can carry pathogenic organisms to foods physically by their bodies, hair and excreta.
Pest infestations should be dealt with immediately but without affecting food safety. Preferably, they should be carried out by specialist pest control service providers.
Keeping Of Records About Pest Controlling
Management of food premises should keep proper records of results of pest control inspections, surveys, maintenance and services, etc. in respect of your premises.
Presence of pests increases the probability of contamination of food and may cause significant damage to food premises. The first and best line of protection is to prevent entry of pests by proper inspection and maintenance of the premises. The second line of protection is to remove pests of food source by proper storage of food and quick removal of reject, food leftovers and spills.

Annual fumigation can be used to prevent or control of pest within the food premises. But, you should be hired well knowledgeable and certified expertise or company for that processes. Phostoxin tablets can be used for that.

Mobile Or Temporary Premises Of The Food Premises

Temporary or mobile premises may be required to appoint within food premises to maintain your plant processes well. When designing and fitting out a mobile  food vehicle, it must meet the required outcomes from the Food Safety Standards.
Mobile food vehicle is mobile premises, for a food selling, means premises that are a vehicle from which a person sells unpackaged food by retail. A mobile food vehicle has specific design requirements that need to be considered.

Otherwise, you can use mobile trolly for transportation facility of your food premises.
There should be minimum requirements to complete your ideas. Walls, floors and ceiling of the food preparation and storage areas of the vehicle must conform with the standard requirements. Doors and serving openings are to be finished on both internal and external sides with the same standard of material as the walls. The driving cubicle of the vehicle must be separated and sealed from the food preparation and storage section. All openings on the mobile food vehicle are to be fitted with close fitting doors and shutters. These must be pests proof and able to be closed during transport.
Washing Facility
A storage tank with at least a 100L capacity must be installed in the vehicle. This tank needs to be filled with potable water and have an attached pressure supply system reticulated to sinks and basins. A waste water tank of adequate capacity must be fitted to the vehicle. A back flow prevention device should be fitted to prevent any possible source of contamination.
Garbage disposal can be done by using separate waste containers with tight fitting lids. It must be fitted. Bin liners must be provided.
Mobile food vehicles cannot be used for sleeping or any other activity that has the potential to contaminate food prepared or stored in the vehicle. When mechanical ventilation is required, the system must be constructed to conform with standard requirements. Facilities must be provided for emergency fire control. It is recommended to provide a minimum 4kg Dry Chemical fire extinguisher and a fire coverlet located within close to cooking equipment.
As well as, the vehicle must be registered if you send it on the road. The installation and use of liquid petroleum gas must conform with the relevant standards. A up to date gas certificate needs to be available for inspection at all times.

I know your dream is building a food premises. That is why, I tried to give some informative articles to you with important tips & tricks. I have given those as follow;

Construction Of Food Premises To Standard Requirements

Construction part is next and most important to build food premises. So, you always keep your construction materials according to your targeted food premises' regulatory requirements.
Stainless steel  is the most suitable and standard material for food premises. Pest proof buildings are must for food premises. There are many tips and tricks to construct that in proper way. Ventilating & Lighting are examples to such kind of  facilities you should be planned. Here may be have some tips for you. Hygienically Important Practices- Part I and Hygienically Important Practices- Part II.
Food premises consists of many buildings and separated areas in proper manner. Those rooms are setting up as its requirements. There are facilities or setup vary from production process to process.  As well, there are many rules and requirements to construct of your dream food premises. This part is very considerable to fulfill your exact requirement.  So, You are the best person to lead those activities by gaining experienced further more. You can read all of my articles frequently in order and got the tips and tricks. Then, you have ability to put those into action.

  • Openable windows to areas containing open foods must where necessary be protected with standard grade fly screens which can easily be removed for cleaning.
  • Electrical fly killing units  should be placed at planned locations. ( It should not be positioned over working  tops or equipment, or near bright windows).

Food premises outcomes should be constructed as below. They are vary according to target. It should be ;
  • Suitable for the types of food produced and activities conducted
  • Provided adequate space for all activities conducted and all equipment to be used or stored
  • Allowed easy cleaning or sanitizing of all structures and equipment
  • Prevented entry of pests, dust, fumes, smoke and other contaminants to reject favorable sites for pests to harbor (live and breed)
Preventing Entry Of Pests
You can catch the ideas to build your premises to prevent pest as here;
  1. Windows within food preparation areas shall be permanently fixed, or in the case of a window which can be opened, it shall be fitted with a tight fitting permanent mesh screen that can be easily removed and replaced for cleaning as I said earlier.
  2. Holes and spaces,  if fittings penetrate walls and ceilings, the affected parts must be sealed to prevent entry of pests or insects. They must also be submitted smooth to allow easy cleaning.
  3. Space between equipment and walls must either be sealed to prevent the harborage of pests or provided with enough space for easy cleaning.
Insect control devices, as I gave above can be installed but must not be located directly over the food preparation area or food storage areas. Insect control devices must be capable of collecting and retaining all captured and killed insects within the device. You can read  Pest Control Of The Food Premises  for more details.
Adequate Space
Proper planning of food premises will effectively assign adequate space and areas for food activities and storage of equipment. Storage areas must be constructed of materials which are durable and easily cleaned in line with requirements for floors, walls and ceilings. It should be provided to few reasons. Such as,  food delivery access, dry goods storage with sufficient shelving space, pantry area and food grade containers for estimated stock levels, hot and cold food storage with adequate refrigeration, freezer like food storage including display areas, food preparation areas and expected deliveries and cleaning chemicals and equipment storage with separate lockers, cupboards, cabinets or designated storage areas.
Food Preparation Areas
Floors are to be finished with one or a combination of these materials. Such as, Sealed quarry or ceramic tiles or Stainless steel, non slip or Laminated thermosetting plastic sheeting or Epoxy resin or Steel trowel casehardened concrete or similar impervious material or Floor tiles grouted with epoxy grout and finished flush with the surface of the tiles or Floors, draining to floor waste, sufficiently graded (at least 1:100) Feather edge skirting is not permitted.
Walls And Ceilings
Walls are to be solid and of framed or preformed panel construction where avoid scan be filled with a suitable material. Joints between preformed panels must be filled and finished flush with the surface of the sheeting material. Cover strips are not permitted in food preparation areas as they allow dirt and grease to accumulate.
Wall Finishes For Food Preparation Areas
Walls are to be finished with a light colored, high gloss, washable and easy to clean surface. Walls in food preparation areas are to be finished with an approved material. Such S, Glazed tiles , Stainless steel or aluminum sheeting acrylic or laminated plastic sheeting polyvinyl sheeting with welded seams pre formed panels, villa board or compressed AC sheeting toweled cement. Any finish continued above ceramic tiles must be finished flush with the tiles to prevent the accumulation of dirt and grease.
Walls at the rear of cooking appliances must be surfaced with an impervious material, such as stainless steel, which extends from the covering to the floor. Where a cooking appliance is sealed to the wall, the material must be kneed over the top edge of the appliance to provide a grease and vermin proof seal. Cooking appliances must only be sealed to walls made of a non combustible material. The bottom plate in all timber framed partitions in food preparation areas must be placed on a "dwarf' wall constructed of concrete or similar material ,and constructed approximately 70mm above the floor
Approved materials for ceilings. They are fibrous plaster or plasterboard  or fibrous cement or cement render with steel trowel, ..etc. Drop in panels are not to be used in food preparation or display areas.
Kitchens And Food Rooms
Adequate space for food preparation is essential to effective and hygienic food preparation having regard to the number of customers to be served. Too small a kitchen or food room may cause congestion and insanitary food operation that increases the risk of food contamination.
Walls should be designed and constructed in such a way that they are capable of being easily kept clean but not providing harborage for pests. Internal surfaces of walls and partitions in kitchens and food rooms should be surfaced with smooth, durable, non-absorbent and easily cleaned materials such as, glazed tiles or stainless steel  to a height of not less than 2 m. The rest may be lime washed or painted. Junctions between walls, partitions and floors should be coved (rounded).
Ceilings should be of continuous construction so that there are no empty spaces or joints. Although ceilings are less likely to require frequent cleaning, the surfaces should allow ease of cleaning. Ceilings in kitchens and food rooms should be lime washed or painted. Ceilings in food rooms should not have smooth, easily cleaned and impervious surfaces. Access openings to the space above that kind of ceilings should be provided to facilitate cleaning and detection of signs of pest infestation.  Walls and ceilings with durable, impervious and easily cleaned surfaces facilitate cleaning work.
Floors in kitchens and food rooms should  be surfaced with non slippery, light coloured, non-absorbent and easily cleaned and durable materials, be coved at the junctions with walls  and be sloped towards a floor drain. Carpets and mats made of absorbent materials should not be provided in food rooms, food storage areas, toilets and other wet areas. Use of duck boards is not allowed.
Non absorbent materials prevent absorption of water and grease. Suitable sloping enables excess water to be drained away to avoid ponding. Properly constructed floor surfaces are easier to clean and sanitize. All these minimize the risk of contamination of food from environmental sources.
Floor drains in kitchens and food rooms should be constructed as to prevent accumulation of waste water,  easily accessible for cleaning and properly trapped, vented and connected to a proper drainage system.
Accumulation of waste water on the floor of food premises increases the risk of food contamination. Properly designed and constructed floor drains can eliminate water accumulation and prevent entry of pests to food premises.
Pipes, Conduits And Wiring
Must be concealed in floors, plinths, walls and ceilings, or fixed on brackets providing at least 25mm clearance between the pipe and adjacent surfaces, and 150mm between the pipe or conduit and adjacent horizontal surfaces. Service pipes, conduits and wiring are not to be placed in the recessed toe space of plinths or equipment.
Storages
You should include store rooms to your layout in proper manner. There may be several stores to store various items in correct way. Few of them gave me. You can separate those as your choice.Floors in storage areas for unpackaged food must meet the same requirements as floors in food preparation areas and for packaged food must have an impervious finish.
Food Contact Utensils Storage
adequate  storage containers that can be easily cleaned  as well as preventing contamination.
Equipment Storage
There should be sufficient floor,  cupboard or shelving space for all cooking  and food reparation equipment to be stored.
Food Packaging Material Storage
Adequate storage located off the floor and protected from contamination  of all the packing materials on pallets, cup boards, racks, ..etc.
Office And Business Equipment
Those must be separate from the food storage and preparation areas to prevent contamination and  entering of crowd to food premises.
